Roll up, roll up, it’s sausage roll snack time! PERi-PERi meets pork, apricot and a very special kind of short-cut pastry… No flakes.
Preheat the oven to 200°c. Mix sausage meat with apricots, parsley, PERi-PERi sauce and breadcrumbs.
Lay bread slices in a line on a chopping boar, slightly overlapping. Roll thinly with a rolling pin.
Place meat into a large sausage shape and lay onto bread. Fold bread over the sausage, seal with a fork and brush egg on the fold.
Brush sausage roll with a beaten egg, place on lined baking tray and bake for 20 minutes or until cooked through and golden brown.
To finish, cut into bite-sized pieced and place on a cooling rack. Serve on a platter (if they last long enough).
